The vintage A 1368
Due south, queen of Cantaussel
This cuvée produced in very small volumes expresses itself around liveliness and tonicity. Very mineral in addition, it allows you to particularly enhance Mediterranean products. It is a marine cuvée par excellence, vinified only in years which allow it, this plot being very sensitive to drought. Perfect to accompany seafood or tuna tartare.
Serve between 8 and 10°.

Manual harvest with sorting on the vine. Wine carefully fined and filtered for optimal quality.
Winemaking
Vinification at room temperature with slight cooling in stainless steel vats and aging on lees for 7 months.
Nose
Straight, balanced, very aromatic. Touch of white flowers and mineral.
Mouth
A tense and nervous wine with lots of freshness.
Serve
at 8-10°C

The vintage C 1617
The nugget of the estate
The C 1617 vintage from the plot bearing its name is an iconic vintage, which finds its place on the best starred tables. Made from cold fermentation which allows subtle aromas to be retained, it surprises with its balance, its sweet bitterness, and its deliciousness. Perfect for a dinner aperitif, chicken with morels or as an accompaniment to a cheese platter with Salers and Roquefort. Serve between 8 and 10°.
